A tasty fresh cucumber salad made in no time. The feta, apricot and almonds give it a Southern European touch.
Cut the cucumber into thin slices and finely chop the onion.
Cut the apricots into small pieces, around half a cm and add the ingredients together in a bowl.
Crumble the feta above the dish and sprinkle the almonds on top.
Add salt and pepper and a little olive oil or balsamic vinegar. Hussel together. Enjoy!
